Yeast:
Yeast is responsible for fermentation which turns a mix of grain and water called “wort” into
alcohol It does this by converting the starch and sugar in the solution into alcohol and a
bi-product of carbon dioxide. In distilling, there are a number of yeast strains available for
speciic use in the distillation process. Consult with your Master Distiller and key suppliers to
ind the right strain for your purposes.
There are many diferent strains of brewer’s yeast available nowadays and each strain
produces a diferent lavour proile. Selecting the right kind of yeast strain for your needs
will require expert consultation. Common and specialty strains of Brewers Yeast and Distillers
Yeast can be sourced from some of the main grain ingredient suppliers. They have specialists
serving the distilling and brewing industry and such suppliers are based both domestically
and internationally.

Support for recipe and product development & trials is available, especially in brewing.
