(i) BUILD - Understanding the scale required of your brewery
The capacity of your brewery will determine how much output you can generate in a given year.
The chart below demonstrates the levels of output for brewhouse sizes ranging from 5hl up to
30hl.
The broad assumptions are as follows: 2 shifts a day Monday to Friday for 48 weeks of the year.
This brewery can be worked a lot harder e.g. 3 shifts per day Monday to Saturday if required.
See the calculation circled below for a 30 Hl brewery when the shifts & days of operation are
increased. (Note 1 hectolitre (Hl) = 100L). The fermentation and maturation capacity must be
matched to the proposed brewery output or else this will cause a bottleneck on your production
output. Some brewers see great lexibility in smaller breweries e.g. 10 hl unit, as they can produce
more innovative brews in smaller batch sizes which they see as advantageous in a market driven
by innovative beer lavours and styles. Your approach will be determined by your vision for the
business and the needs of the market.
